1322706 Emulsifying agents UNILEVER Ltd 17 July 1970 [17 July 1969] 36117/69 Heading A2B [Also in Division C2] - The invention comprises an acyl ester of a glycoside containing an alpha or beta pyranoside ring and a polyol aglycon residue in which one or more of the remaining glycoside hydroxy groups are esterified. The esters are used as emulsifier in the preparation of foodstuffs e.g. in bread-making. The pyranoside rings may be derived from any pyranose sugar e.g. glucose, arabinose or glaotose or a polysaccharide which contain such units. The aglycon residue is derived from polyols e.g. glycols, glycerol and condensed glycols containing from 2 to 10 carbon atoms. The ester may be mono, di- or tri-esters of aliphatic mono carboxylic acids which may be saturated or unsaturated and preferably contain 6 to 22 carbon atoms. |
