PURPOSE:To produce the title soy sauce having excellent flavor and homogeneity, and suppressed solid-liquid separation, by mixing liquid soy sauce with powdered soy sauce and a thickner such as cornstarch, etc., heating the mixture to obtain a solution, converting the solution to paste, and cooling and homogenizing the paste. CONSTITUTION:Powdered soy sauce is added to liquid soy sauce so as to give the NaCl concentration in the final product of 15-30W/W%. A thickener such as cornstarch, starch phosphate sodium salt, etc., is added to the mixture to attain the viscosity of the final product of 10,000-100,000 cp. The mixture is heated, dissolved to a solution, converted to paste, cooled and homogenized to obtain the objective paste soy sauce. |
