The device is provided with a head (4) for holding the knives (3) which rotates in the direction in which the bone (2) extends, which bone (2) is held in a pendulum-like fashion by one of its ends and is moved vertically by the head (4) which has knives (3) which are articulated to the head (4) at a single point. The knives (3) are held via elastic means (12) with an adjustable elastic reaction constant against the outer surface of the bone (2), independently of one another and by means of a force which depends on the structural properties of the bone (2) which are detected by means (21) which accordingly modify the speed at which the head rotates, the speed at which the bone is advanced and the reaction constant of the elastic means (12) which act on the knives (3). <IMAGE>
