Roasted and ground coffee may be extracted by a countercurrent multistage slurry extraction system to produce a coffee extract of 10 to 30% concentration at yields above 40%. The roasted and ground coffee is preferably finely ground, is then contacted in a first stage M1 with extract from a second stage M2; the partially extracted grounds are separated from the first stage extract and contacted in the second stage at elevated temperature and pressure with extract from a third stage M3, separated and contacted with feed water in the third stage M3.
