A process for preparing anthocyans by reducing their corresponding flavonoid glycosides with a metal and acid at 20-30°C in an acidic condition wherein the reduction reaction is carried out either under irradiation of light or without the same and by precipitating the anthocyans as a metal salt and converting the metal salt into the corresponding free anthocyans.
