<p>Baked comestibles are packaged aseptically by baking in the package to provide a bacteriological barrier, preferably using for the package a vapour-permeable foil; re-infection is prevented by finally sealing the package preferably in an impervious outer container, followed by heat pasteurisation. Special baking conditions ensuring homogeneous pasteurisation throughout the product are adopted for part-baking bread and like dough-based products.</p> |
