PURPOSE:To provide the title caldron capable of producing high-quality soybean curd products by anybody without relying perception, so designed that when ground soybean-water slurry and soybean milk are to be boiled, a heating-mixing part followed by non-heating part is provided and, in this way, the above raw material is alternately repeatedly boiled in the heating-mixing, non-heating, heating-mixing, non-heating parts in this order. CONSTITUTION:A soybean-water slurry and soybean milk delivered from a metering pump 1 are mutually mixed in a heating-mixing part 3 using an injecting 4 steam in combination with its injection pressure and fed to a non- heating part 6, where mutual heat exchange is made for ca. one minute to bring both the soybean curd refuse and soybean milk parts to a constant temperature. Thence, heating-mixing 3, non-heating 7, heating-mixing 3, non-heating 8, heating-mixing 3 and non-heating 9 processes are successively repeated in this order followed by aging for ca. 4-5min in an aging part 10 and then discharging. The amounts of steams and temperatures are controlled with the respective steam valves 2 so that the non-heating parts 6, 7, 8 and 9 fall at temperatures of 40 deg.C, 60 deg.C, 80 deg.C and ca.97 deg.C, respectively. |
