摘要

A method is described for recovering the juice from hoed vegetables e.g. potatoes in which the starting material is comminuted after washing and the slurry obtd. separated into a concentrate and juice. The vegetable is first pre-divided in a first closed appts. in the absence of O2 and the presence of SO2. The material is then transferred under pressure to a second closed appts. in which further mechanical destruction of the cell walls takes place. The juice is then passed to a series-connected centrifuge and recovered with a minimum of oxidn. products. The process results in the recovery of potato protein of improved colour and taste and enables it to be used in human foods as well as in feedstuffs.
