PURPOSE:To provide a method for the oxidation of alcohols and aldehydes under mild conditions, under which the reaction is easily monitored and controlled, and to use the reaction to the modification of foods and drinks, and for the physiological measurement. CONSTITUTION:The following reaction I and reaction II are simultaneously or alternately proceeded in a system. The reaction I is oxidation of alcohols or aldehydes (C) and the reduction of oxidzed nicotinamide-adeninedinucleotide (B) to reduced nicotinamide-adeninedinucleotide (B') by contacting an immobilized hydrogenase (A) with (B) and (C); and the reaction II is oxidation of (B') to (B) by contacting bacteria (D) capable of oxidizing (B') to (B) (e.g. bacteria belonging to Arthrobacter, Bacillus, etc.) with (B') and oxygen. |
