Bread formed from different kinds of dough has >=2 layers one upon the other, and is baked in a tin; the underlayer being from a dough which is specifically heavier than the dough of the upper layer or layers. The expensive practice of cutting and packing slices of wholemeal bread with slices of bright mixed bread, so that there is an interchange of aroma and taste is superceded. Instead the interchange takes place during baking. The method prevents the excessive prodn. of gas which otherwise separates the layers, and the various layers are attached securely together. |
