Fructose was prepd. by hydrolyzation of Jerusalem artichoke[I with inulase. Thus, inulase was prepd. from kluyveromyces fragilis, purified by sepharose-6B and DEAE--Sephadexion exchange chromatg. I was hydrolyzed by inulase at pH 5.0 and 50≦̸C for 4hrs. and purified by dowex-80 ion exchange chromatg. contg. bisulfite soln. to give fructose, useful as a sweetener and for injection.
