Crystalline maltose is obtained in good yields by subjecting a starch hydrolysate having a maltose content of at least 75% and a viscosity of more than 400 mPa.s to the action of glycoamylase (amyloglucosidase) whereby the viscosity is reduced to less than 400 mPa.s without a substantial reduction of the maltose content occurring. The hydrolysate obtained is supersaturated by concentration and then subjected to a conventional crystallisation process. Maltose crystals having a size of at least 120 x 50 mu m result in excellent purity.
