Minced meat-like food made directly by (a) dispersing in wheat gluten 0.1-5% of at least one surfactant chosen from glycerin fatty acid esters, propylene glycol fatty acid esters, sorbitan fatty acid esters, and polyoxyethylene sorbitan fatty acids esters; and (b) heat-treating at 70-110 degrees C (to gel). - No mincing or moulding step is required.
