An arrangement for loading a baking oven includes at least one rack. This has shelves formed by full plates capable of storing heat, and it remains inside the over chamber. A loading and unloading trolley consists of a frame with wheels and a number of flat supporting plates placed one above the other so that they can be inserted between the shelves of the rack. Each supporting plate carries an endless runner of the type usual in bakery plants, on which the portions of dough are placed for feeding on to the oven shelves. This combines the advantages of baking trays put onto shelves in the oven chamber and loading racks wheeled into and withdrawn from the oven. There is no loss of heat energy by the cooling down of the rack shelves outside the oven during changeover, labour is economised and maintenance costs are reduced.
|
