Inside shells of chestnuts were peeled by soaking decrusted chestnuts in 1% CaO soln. for 10-12hr to solidify the tannin in the chestnuts, followed by dehydration indoors, treating with polyol as glycerine, ethyleneglycol, propyleneglycol for 20 sec. at 200-220≦̸C, and then soaking in water for 20 sec. Peeling yield was 92-98%.
