HYDRATED EMULSIFIER POWDER FOR FOOD AND COSMETICS

A powdered hydrated emulsifier composition is prepared by spraying a molten emulsifier through a nozzle into a cooling chamber and injecting into the molten emulsifier before spraying water at a temperature of above about 37 DEG C and in an amount of from 2-15%. The resultant powder has the functionality approaching that of a fully hydrated emulsifier but retains the physical characteristics of a powder.
