A synthetic granular caviar comprises granules containing gelatin, a vegetable tanning agent (e.g. a tea extract) and a gelled aqueous solution or suspension of edible proteins other than gelatin (e.g. casein or protein of yeast, chlorella or soya bean). The granules may also contain glycerol, starch, dextrin, agar-agar, pectin, corn oil, cottonseed oil, cod liver oil, herring juice, lecithin, vitamins (e.g. ascorbic acid), dyes of animal or vegetable origin, flavouring agents (e.g. salt or sodium glutamate) and preservatives. The caviar may be prepared by dispersing drops of a gel-forming mixture comprising at least gelatin and the protein solution or suspension, into oil, at least a lower layer of v/hich is at a temperature to gel the mixture, tanning the gelled granules by immersing in tanning solution, dyeing the granules, and mixing with flavouring and preserving agents and oils or treating with oil containing proteins, flavouring, preserving and emulsifying agents. |
