<p>Pickles cheese is salted and packed by means of a device mouned on a rail track equipped with a vertically moving piston to which two chambers are attached, one for drawing and maintaining a vacuum, and the other for feeding salt solution into the cheese. The vacuum chamber is connected to a series of vacuum heads with suction ports which are placed in contact with the cheese and hold the head firmly against it. The ports are also equipped with valves so thaT, in the event that the surface of the cheese does not permit one of the heads to bed down, the valve closes and the vacuum in the chamber can still be maintained. The salt solution chamber is coupled to needles which pass through the vacuum chamber and ports although isolated from them and are injected into the cheese as the head is lowered. The needles have drainage ports which distribute the injected brine into the cheese. The injection needles are pref. 7-9 cms long with an internal diameter of 0.4-0.8m. The device enables the salting of the brine to be incorporated into a packing line with a saving of labour and space.</p> |
