The subject of the invention is a process for the production of a lactase which is stable to heat and therefore capable of bringing about the hydrolysis of lactose at temperatures which are too high for, that is to say unfavourable for, the growth of certain bacteria usually present in milk or milk products. According to the invention, a microorganism of the genus Bacillus, which exhibits optimum growth at a temperature of at least 45 DEG C, preferably Bacillus coagulans NRRL B-8100, is cultured in a nutrient medium containing lactose, and the lactase produced is recovered.
