PURPOSE: To obtain a yeast extract rich in guanosine-5'-monophosphoric acid by depolymerizing yeast under oxidation conditions with ribonuclease forming 5'-ribonucleotide. CONSTITUTION: Yeast preferably belonging to Saccharomyces is depolymerized under oxidation conditions with ribonuclease forming 5'-ribonucleotide, preferably phosphodiesterase to obtain the objective yeast extract suitably used as a food flavoring substance for soup, a meat product, etc.
