PURPOSE:To prepare proteins having excellent whiteness, useful as food and industrial raw material, from microbial cells, by treating the microbial cells with an anionic surface active agent before extraction. CONSTITUTION:Living or disintegrated microbial cells obtained by culturing bacteria such as Pseudomonas genus, Corynebacterium genus, etc., or yeasts such as Candida genus, Torulopsis genus, etc., are heated at room temp. -100 deg.C, pref. 60-90 deg.C, and pH3-9, pref. pH5-7, for 10 min. -3 hours, pref. 0.5-1.5 hours, in the presence of usually 3-30%, pref. 5-20%, based on the cell, of an anionic surface active agent such as sodium laurylsulfate. The treated cell is concentrated, washed, and sxtracted its protein component. The extracted protein is decolorized with hydrogen peroxide, etc., and the protein is separated. |
