The bulk food-fryer utilises hot fat, may be used to fry fish etc. and comprises a heater tank (2) and a frying bin (1). The tank (2) and the bin (1) are connected by pipes incorporating a three-way valve (22) and controls respond to the temperature needs of the fat in the bin. The system is designed to avoid overheating of the fat with resulting wastage. The valve (22) may be operated manually and also by a switch (8) which projects from the floor of the bin (1). The pipework system includes a submersible pump (20) and a filter screen (17) which locate in the tank. The bin (1) may have an overflow pipe (5) leading to the filter (17), and the bin (1) may be sited above the tank (2). In addn. an outlet (24) from the valve (22) may also lead to the filter. The tank may be subdivided into two compartments (14, 13) containing heater coils (16) and the pump respectively.
