1516628 Puffed food product MARS Ltd 10 June 1975 [10 June 1974] 25595/74 Heading A2B Discrete dried particles comprising at least an outerlayer of a homogenous substantially amorphous edible dried gel of at least one high molecular weight ingredient are explosively puffed and sintered in a closed mould thus to form a cellular coherent body by cohesion of the individual puffed particles. Preferably the high mol. wt. ingredient is at least 50% protein e.g. soya protein, casein, gelatine, zein or gluten, or at least 50% carbohydrate e.g. cereal grains, cereal semolina or cereal flour, or a mixture of protein and carbohydrate e.g. cereal flour or cereal starch or waxy maize and soya protein or skimmed milk powder. The gel may also contain a gum, e.g. locust bean gum. The puffing may be effected by immersing the mould in hot oil, microwave radiation, resistive electric heating, infra-red radiation or exposure to a hot gas stream. The particles may have sodium caseinate or a monosaccharide applied to them as an edible binder prior to puffing, and a filling material may also be present in the mould. |
