An oven for processing food products comprises at least one processing chamber containing a superheated steam atmosphere and with the products supported within that chamber; at least one heating element is located within the chamber to super heat a supply or saturated steam. The oven may be utilised for stabilising the food products and the stabilisation can take the form of either fixing or glueing a coating to the food product, treating the surface thereof to impart rigidity or shape retention to the end product after further treatment thereof, cooking the entire product or combinations thereof. |
