<p>A method of defrosting frozen food having a high water content in a convection-heating chamber, which comprises enclosing the frozen food, which reaches a temperature region in which ice crystals and liquid water coexist in the food, within a smaller chamber for dielectric heating and provided in the convection-heating chamber, and heating the frozen food in the smaller chamber by conductive heating and dielectric heating simultaneously while regulating the power of the two heating means to be at least approximately equal until the frozen food to be defrosted passes through the said temperature region.</p> |
