The steamed coated food may be dried in a current of hot air at for example 150 to 200‹C. The steam treatment should be sufficient to set the batter but insufficient to cook or overheat the foodstuff within the coating. If desired the product may be sprayed with cooking oil, before or after the steaming to facilitate final cooking e.g. by grilling. The preferred foodstuff is fish e.g. fish fingers.
