<p>PURPOSE:To prepare high-quality Japanese rice wine free from discoloration and scorch small preventing the scorching during liquefaction stage by liquefying polished rice or crushed rice flour with an apparatus having a specific construction using a specific method. CONSTITUTION:Polished rice or crushed rice flour is mixed with water in a liquefaction tank 1, added with a liquefaction enzyme and liquefied under a temperature condition not to cause the scorch of the gelatinizing raw material. The liquefied liquid of the polished rice or rice flour is transferred through a pipe line at a constant rate. In the course of transfer, the liquid is heated by mixing and contacting in the pipe line 6 with low-pressure steam supplied from a reboiler 7 through a steam mixing nozzle 10. The heated liquid is transferred into a cooler 11 evacuated a vacuum pump 15 to evaporate and remove excess water and to cool the liquid. Finally, the cooled liquid is transferred through the outlet port 16 of the cooler 11 via a transfer pipe 17 to a fermentation tank 19 and fermented.</p> |
