Heat exchanger comprises an annular cylindrical space in which the medium is treated, a vertical drive shaft to which is mounted the scraper device, and hollow walls through which a heating or cooling heat transfer medium is passed. The scraper device consists of a horizontal arm at the top of the cylinder and connected to the drive shaft and vertical scraper shafts positioned in the centre of the annular space and attached to the outer ends of the drive arm. The scraper blades consist of a sheet metal plates with the outer edge in contact with either the inner or outer a wall of the annular space and with the central part wrapped around the shaft to provide a mounting. In motion, the blade is oushed against the wall by the hydraulic pressure or the medium and presents a clean flow surface to the material scraped from the wall. The device operates effectively at a low rotational speed so that mediums such as jams can be treated without damaging the fruit. The clean flow surfaces prevent the material from being trapped by the agitator blades.
