摘要 <p>The process comprises (a) peeling, sorting and finishing; (b) soaking in cold water and opt. freezing; (c) putting in a container for sterilisation and cooking in an autoclave followed by rapid cooling. The container is a sachet which can be put under vacuum and sealed. The chestnuts are put into the sachet without additives. The sachet is put under vacuum and sealed or put under vacuum, then under inert gas at low pressure or at atmospheric pressure, and then sealed, followed by autoclave treatment. The process avoids using a salt or sugar syrup. The chestnuts retain their natural flavour. Also after opening the container, they can be kept longer in the refrigerator than present products.</p>
