A new process is provided for preparing a new substance 3-amino-1-(.alpha.-carboxy-4-hydroxybenzyl)-2-azetidinone, its salt or its derivative at the carboxy group the process comprises Ndeacylating 3-(.alpha.-substituted or unsubstituted glycinamido)-1-(.alpha.-carboxy-4-hydroxybenzyl)-2-azetidinone, its salt or its derivative at the carboxy group in the presence of a cultured broth of a microorganism or its processed material or an amino-pepti-dase derived from an animal body, which is capable of N-deacyl-ating 3-(.alpha.-substituted or unsubstituted glycinamido)-1-(.alpha.-carboxy-4-hydroxybenzyl)-2-azetidinone, its salt or its derivative at the carboxy group to produce 3-amino-1-(.alpha.-carboxy-4-hydroxybenzyl)-2-azetidinone, its salt or its derivative at the carboxy group; the new substance is useful as an intermediate for preparing antibacteria1 3-acylamino azetidinone derivatives.
