MANUFACTURE OF FISH MEAT POWDER FROM ACID-MODIFIED FISH MEAT SLURRY Fish meat powder is produced by preparing a fish meat slurry in the presence of an acid which easily decomposes or volatilizes at relatively low temperatures, e.g. carbonic acid, so as to lower the pH and consequently the viscosity of the slurry. Immediately thereafter the slurry is spray dried and the acid is instantaneously decomposed or volatilized during the spray drying so that the powder obtained has a substantially neutral pH value.
