<p>Greasy fumes are drawn by a fan into an extraction hood installed at a level above cooking equipment. Inside the hood, water sprays provide a water curtain through which extracted fumes must pass to exhaust. The water is pref. recirculated, carrying sepd. grease from the hood to a tank with constant overflow to remove grease and a pump to recycle degreased water. The overflow is produced by a small, controlled inflow of fresh, makeup water. Inside the hood, the fumes are pref. directed water chicane baffles onto which the water is sprayed. The hood is pref. fitted with a temp. detector so that an abnormally high temp. automatically results in increased water supply and the extraction fan being switched off. Used in removing grease from cooking fumes extracted from kitchens, partic. professional kitchens in restaurants, canteens, etc. Very thorough cleaning of the exhausted fumes is provided practically all the grease is washed out and the recirculation system ensures that very little fresh water is used.</p> |
