<p>A fillet of smoked salmon is laid upon a support plate which is inclined quite steeply to the horizontal. The longitudinal axis of the fillet lies in a vertical plane and the support plate complete with fillet is reciprocated vertically. The lower end of the fillet overhangs the support plate so that an upstroke of the plate brings the overhang across the cutting edge of a rotary blade. The slice thus detached is delivered by gravity on to a horizontal collecting table. Before the next upstroke, the fillet is allowed to slide down the support plate to present a new overhang for slicing. The extent of the new overhang is pref. limited by a stop plate just below the rotary blade. The upstroke pref. carries the slice over the top of the top plate to drop onto the collecting table. Support plate reciprocation is pref. synchronised with fillet feed release for fully automatic operation. The machine offers high output of slices for commercial distribution. The quality of prod. is at least equal to manual slicing, but the cost is greatly reduced.</p> |
