Dry mix for milk-based drinks - comprises a substrate coated with carboxymethyl cellulose and food acid

Dry mix comprises (a) an easily soluble substrate (I) and (b) an edible acid to give the final drink a pH 5. (I) has been treated with a carboxymethylcellulose (cmc) which will dissolve directly when dispersed in aq. soln. (I) is pref. sugar, and is moistened with sufficient water to ensure attachment of the cmc, then mixed with the cmc. The mixt. may contain milk solid, or these may be used as a substrate. In this case cmc is dispersed in milk and the mixt. dried. The pref. acid is citric acid and the compsn. can additionally contain a sweetener. The dry mix can be reconstituted rapidly and simply with milk or water. The drinks are stable even though they have pH below the isoelectric point of milk protein.
