<p>Matured soft cheese enriched in whey protein is prepd. with the further addn. of casein protein to the boiler milk used. The casein protein may be added as Na-, K-and/or Ca caseinate, as a powder, dispersion or soln. Casein protein proportion added is pref. such that wt. ratio casein protein:whey protein in end prod. is 25:1 - 6:1. Casein protein-enrichment yields a prod., e.g. a Camembert type cheese, having good structure, taste, constant quality and stability.</p> |
