<p>Meat contg. bones, such as an animal carcass, is divided by means of a cutting tool which is forced against the meat whilst vibrating at a frequency of >2000, pref. 6000-12000 vibrations per minute. Specifically, a carcass is divided along its length by placing it on a support stand onto which the cutting device is mounted. The cutting blade is mounted between two spring loaded guide plates which splay out at the lower edge. As the blade is lowered, the guide plates touch the meat on either side of the spine causing the spine to be centrally positioned beneath the blade. Whilst the cut is made, the carcass is held in position by the guide plates so that the carcass is accurately cut in half. Method avoids the disadvantages of known methods of parting meat contg. bones, in which a chopping action produces splinters or a sawing action produces a slime. The carcass can be accurately halved in a production line process.</p> |
