Prepn. of the prods. comprises first forming a paste or cream of rice by cooking a dispersion of rice flour in water. Dehydrated vegetable particles are then incorporated opt. with other additives to form a hard paste. The paste is then put into the desired form and the elements obtd. may then be frozen. The process is esp. applied to fried prods. partic. based on potato. It enables a similar taste and texture to be obtd. in the cooked prod. as is obtained using fresh vegetable.
