<p>Herb bread is prepd. by (i) extracting herbs in a medium contg. a fermentation acid or its salts. (ii) adding the mixt. to bread dough and (iii) baking. Healing herbs can be made widely available as a tasty, aroma-laden, health-promoting bread. Essential oils are extd. in high yields, e.g. essential oil content ratio of lactic acid- to aq. extracts can be (2.7-3.1): 1. The extracts are absorbed well by digestive tract. The acids are esp. lactic- and citric acid. The herbs can be fresh or pref. dried and comminuted, and may be mistletoe, hawthorn, celery, St. John's wort, birch leaves, nettles, parsley and/or horseradish. Natural leaven may be used as the lactic acid- contg. medium.</p> |
