<p>The grill, for food e.G. poultry, uses infra-red radiation to 'brown' the food externally and to cook it internally internal heating is accomplished by an internal IR radiator enclosed in a metal spacer and/or enclosed in several radiation-permeable tubes to increase thermal conduction and heat transfer. A coolant may flow in one of these tubes. The internal radiator also functions at a rotatable spit. The outer side of the outer spacer tube may have grooves or ridges along its length which prevent rotation of the food on the external conductor.</p> |
