摘要 <p>Isolation of lysozyme (I) from (I)-contg. material (esp. albumen) is carried out by contacting the material with a weakly acidic COOH-contg. ion-exchange resin after adjusting the resin to a pH of >7.1. or 6 (pref. 8-9.5) and washing it with water. The adsorbed (I) is then eluted from the resin. (I) is used as a food preservative and in the treatment of inflammations and injections. When the prefd. pH of 8-9.5 is employed (cf. pH 6-7 in GB 1110466), the physical and chemical properties of the by-produced (I)-free albumen are unaltered, so it is still useful for nutritional purposes.</p>
