Provided are a method for preparing eggplant chocolate and eggplant chocolate prepared thereby. The method for preparing eggplant chocolate comprises the following steps: removing outer skin of eggplants by washing the eggplants, and steaming flesh of the eggplants; forming the steamed eggplants into one form selected from the group consisting of a dice, a tablet, and a pellet; preparing an eggplant core by drying the formed eggplant flesh; and coating the outside of the eggplant core with a chocolate layer. The eggplant chocolate: is able to obtain excellent flavor and nutrition of both eggplant and chocolate by having softness of chocolate and cellulose of eggplant; and enables eggplants to be stored, distributed, and consumed for a long period of time by taking the eggplants having extended preservation and storage periods as a novel material, thereby being widely used as a variety of gifts, souvenirs, general snacks, and health foods. |
