<p>A vertical cylindrical processing tank is for the scraped surface heat exchange treatment of acid creams, i.e. through the pH range of 6.6-4.6. The tank has a rotary axial shaft fitted with blades to displace th cream vertically. The new tank has a first set of blades roughly in the middle of the shaft and a second set of blades right at the bottom of the shaft. Tank sidewall and base scrapers are fixed to struts extending from the blades and a fixed deflector is attached to the sidewall about half way up. The tank is fitted with internal washing equipment, e.g. spray balls The scrapers are pref. hinged to the struts and designed to scrape virtually the whole of the heat transfer surfaces of sidewall and base. Used for prechurning process acid cream used in the mfr. of butter. The process involves acidifying, heat treating and mechanically working the cream.</p> |
