PROBLEM TO BE SOLVED: To provide novel means for controlling heptelidic acid productivity of microorganisms such as aspergillus.SOLUTION: The invention relates to (a) a protein consisting of an amino acid sequence including deletion, substitution, or addition of one or several amino acids in a specific amino acid sequence of a protein consisting of a specific amino acid sequence, the protein having sesquiterpene cyclase activity; a method for controlling the production of heptelidic acid, the method comprising inhibiting or suppressing the expression of the enzyme DNA; a method for producing brewed foods using the aspergillus; and a method for producing heptelidic acid.SELECTED DRAWING: Figure 7 |
