PURPOSE:To obtain TOFU in a short time without requiring specific facilities, etc., by immersing raw soybeans in water, dehydrating the soybeans, freezing and storing, immersing the soybeans in water before processing and thawing to separate immersion process from process of grinding, etc. CONSTITUTION:Raw soybeans are washed with water immersed in water, dehydrated when water is absorbed in the central part, put in a refrigerator and frozen. The frozen soybeans are immersed in water, thawed, ground, the prepared solid-liquid mixture is heated, then subjected to solid-liquid separation, the separated solution is uniformly mixed with a coagulant, put in a molding box and molded to give TOFU. |
