摘要 PURPOSE:To provide a baked rice food not deformed and not causing the lowering of the state thereof and the deterioration of the quality thereof even when stored in a frozen state, by pre-baking or steaming boiled rice prepared by mixed with a boiled rice binder and press-molding the mixture, coating the treated boiled rice with a seasoning and subsequently subjecting the seasoned molded rice to a main baking process. CONSTITUTION:Slightly hard boiled rice 1 is supplied into a hopper 2, homogeneously mixed with a food natural sizing agent aqueous solution 3 as a boiled rice binder with stirring bars 4 and subsequently carried into a rice-molding machine 5. In a molding machine 5, the boiled rice 1 is pressed and transferred with a pair of left and right belts 7 and 7 disposed in a downwardly gradually narrowed state and subsequently extruded into a mold 8. The extruded boiled rice is cut into a molded rice 9 having a prescribed shape with the closing action of cutters 10 and 10 and subsequently carried into a wetting device 12. Water is sprayed on the surface of the molded rice 9 with a spray 13 and the wetted molded rice 9 is carried into an oven 15 and pre-baked to gelatinize the aqueous solution 3. The rice 9 is carried into a seasoning solution-coating device 16, coated with the seasoning solution 18 by spraying the solution with sprays 17, carried into an oven 20 and thermally baked to provide a baked rice food such as a baked rice ball.
