Machine for making Indo-Chinese rice pancakes (banhtrang) comprises a hopper contg. cooked rice paste which delivers it to be shaped on rigid plates or stretched cloths. The paste is spread out by a piston and formed into continuous bands. These are moved forward, dried and cut up. The pancakes are pref. dried in air with controlled temp. and humidity. The plates may be of metal or plastics, e.g. PVC. and the cloths of vegetable or synthetic fibre. The machine allows square or rectangular pancakes to be made, whereas only round ones can be made by hand. Hand manufacture is also time-consuming and requires great skill. |
