PURPOSE:To prepare delicious noodles resistant to the progress aging after cooking, by adding acetyl ester of starch to the raw material of noodles. CONSTITUTION:An acetyl ester of starch having the content of acetyl group of about 0.2-3% (dry basis) and obtained by the acetylation of starch or a starchy material is added to the flour for the preparation of noodles in an amount of about >=10%, preferably about 10-30%, and the mixture is formed into noodles by the conventional method. |
