PURPOSE:To separate a soil bacterium such as sporular bacterium and obtain soybeans capable of providing good TOFU (soybean curd) product by dipping soybeans into warm water and irradiating the soybeans with ultrasonic wave while changing the warm water. CONSTITUTION:Beans such as soybean is dipped in warm water (e.g. kept to 45 deg.C) and irradiated with ultrasonic wave (e.g. having power of 30W, 45KHz) while continuously or intermittently changing the warm water to carry out cleaning of beans and elimination of ash ingredient. |
