<p>A food product, for the domestic prepn. of yoghourt, comprises a sealed container contg. liquid conc. milk contg. 17-21% dry solids. The conc. milk is sterilised by uperisation at 130-145 degrees C. The uperisation consists in vaporising the milk at this temp. then recondensing it. In another method for a product as above, the milk is sterilised in bulk by the U.H.T. (unit high temperature) process at 130-145 degrees C. It is packaged under vacuum.</p> |
