A fish filleting machine has pairs of disc cutters which are attached to a drive shaft through opposite-hand threads in their hubs. An elastic element, e.g. a torsion spring, provides the kinematic connection between shaft and hubs. This automatically adjusts the gap between the cutters to suit the size of fish. No prior sorting of the fish by size is needed and the waste of useful flesh is reduced to a minimum.
